This is my all-time favorite lamb recipe. The lamb in it is so soft, juicy and rich in flavor, which makes the potato taste amazing as well. I call it a perfect dish as it has potato for the carbs, meat for the protein, and just a little bit of fat. A healthy combination that is best for keeping you full for longer.

Are potatos healthy?
Potatoes are a source of healthy carbohydrates because they provide complex carbs that fuel the body with steady energy. Unlike processed carbs, potatoes are a whole food rich in essential nutrients such as vitamin C, vitamin B6, potassium, and dietary fiber, especially when consumed with the skin.
They are best to combine with protein, which is lamb in this recipe.
